5 lbs. New red potatoes
1/2 cup olive oil
1/2 cup red wine vinegar
1 can french cut green beans, drained
1 can pitted black olives, drained
2 med. Purple onions, sliced
Salt, pepper & garlic salt to taste
Cook and cool potatoes. Cut in pieces of desired size. In a large bowl, mix potatoes, onions, green beans, olives, oil, vinegar and spices. Marinate for at least 4 hours at room temp. Taste before serving, you may need to add more vinegar or spices.
