4 to 6 boneless chicken breasts
1 can cream of mushroom soup
1 jar pimentos
1/2 cup cooking sherry or white wine to taste
Use your favorite fried chicken recipe to fry the chicken breasts. Drain thoroughly.
In skillet, combine mushroom soup, pimentos, black olives and sherry or wine. Simmer for approx. 20 minutes. Then add chicken breasts, coat with sauce and simmer on very low heat for another 10-15 minutes and voila!
This recipe can be served with rice or noodles. Also note that you can add more soup and wine to make more sauce. It's very flexible! Bon appetite!
